Greek Yogurt Banana Bread is a fantastic way to use up ripe bananas and create a moist, tender loaf with a slight tang from the yogurt. It's a healthier option that doesn't sacrifice flavor, making it a great choice for breakfast or a sweet treat.

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup Greek yogurt

  • 1/4 cup honey

  • 1/4 cup melted coconut oil

  • 2 large eggs

  • 1 cup mashed ripe bananas (about 2-3 bananas)

  • 1 tsp vanilla extract

  • 1/2 cup chopped walnuts (optional)

Preparation

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.

  2. In a bowl, whisk together flour, baking soda, and salt.

  3. In another bowl, mix Greek yogurt, honey, coconut oil, eggs, bananas, and vanilla extract until smooth.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  5. Fold in walnuts if using.

  6. Pour batter into the loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
